Dominica Creole Cuisine and Culture: Dominica restaurants
Buljow
This is a caribbean favourite, made with salt cod and onions. Dominica preparation is quite different: Salt Cod is cooked in coconut milk with with onions, hot peppers, spring onions, tomatoes and green fig. You'll find it in the villages and the Rastas huts. Rasatas have their own vegetarian cuisine or 'Ital'.
Bakes
a fritter stuffed with cod, tuna, and cheese. Its sold on many a street corner and is a staple food of many.
Rôti
A sort of wrap filled with curried chicken, meat, shrimp or vegetables.
Callaloo soup
This looks a little like spinach soup. These are leaves from the dasheen plant.
Pumpkin soup
This is the Creole version of winter squash. Often served in local restaurants as an entrée.
Mountain chicken
A more appealing name for frog's legs. They do taste like chicken and server fried or Creole.

Buy it at the Roseau market on Saturday mornings from 8:00 a.m. and 10:00 a.m.
Fish:
The local fish is excellent; marlin, sea bream, tuna, crayfish and lobster, buy them in the fishing villages.
